Ingredients
  

1 cup all-purpose flour

1 cup rolled oats

1/2 cup unsalted butter, melted

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

2 cups fresh blueberries (or frozen, thawed)

2 large eggs

1/4 cup lemon juice

Zest of 1 lemon

1/2 teaspoon vanilla extract

1/2 cup powdered sugar (for icing, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper.

    In a mixing bowl, combine the melted butter, brown sugar, and granulated sugar until well mixed.

      Add in the eggs, lemon juice, lemon zest, and vanilla extract. Whisk until fully combined.

        In another bowl, mix the all-purpose flour, rolled oats, baking powder, and salt. Gradually stir the dry ingredients into the wet mixture until just combined.

          Gently fold in the blueberries with a spatula, being careful not to crush them.

            Pour the batter into the prepared baking pan, spreading it evenly.

              Bake in the preheated oven for 25-30 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out clean.

                Once baked, remove from the oven and let it cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely.

                  For an optional icing, mix the powdered sugar with a splash of lemon juice until you achieve a smooth consistency. Drizzle it over the cooled bars.

                    Cut into squares and serve.
