500g ground lamb

1 small onion, finely grated

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh mint, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon smoked paprika

1/2 teaspoon cinnamon

1/2 teaspoon chili powder (adjust based on heat preference)

Salt and pepper to taste

2 tablespoons olive oil (for grilling)

Wooden skewers (soaked in water for 30 minutes)

Instructions
 

In a large bowl, combine the ground lamb, grated onion, minced garlic, parsley, mint, cumin, coriander, paprika, cinnamon, and chili powder. Season generously with salt and pepper.

    Mix the ingredients together with your hands until just combined; do not overmix as this can make the kofta tough.

      Divide the mixture into equal portions and shape each portion into a long sausage-like shape around a skewer. Ensure the meat is secured well around the skewer for easier grilling.

        Preheat a grill or grill pan over medium-high heat. Add the olive oil to prevent sticking.

          Grill the kofta skewers for about 8-10 minutes, turning occasionally, until they are browned and cooked through. The internal temperature should reach 70°C (160°F).

            Remove from grill and let them rest for a couple of minutes before serving.
