2 lbs chicken wings

1/4 cup soy sauce

1/4 cup honey

2 tablespoons gochujang (Korean chili paste)

2 tablespoons sesame oil

4 cloves garlic, minced

1-inch piece of ginger, grated

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons water

2 tablespoons sesame seeds

3 green onions, chopped for garnish

Salt and pepper to taste

Prepare the Marinade: In a large bowl, whisk together soy sauce, honey, gochujang, sesame oil, minced garlic, grated ginger, and rice vinegar until smooth. Adjust the sweetness or spiciness by adding more honey or gochujang according to your preference.

    Marinate the Wings: Add the chicken wings to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 425°F (220°C).

        Prepare for Baking: Line a baking sheet with aluminum foil and place a wire rack over it. This allows the heat to circulate around the wings for even crisping.

          Bake the Wings: Remove the wings from the marinade (reserving the marinade) and arrange them on the wire rack. Bake for 25-30 minutes until golden brown and crispy.

            Make the Glaze: While the wings are baking, pour the reserved marinade into a small saucepan. Combine cornstarch and water in a separate bowl to create a slurry. Bring the marinade to a simmer over medium heat, then add the slurry, stirring until the sauce thickens.

              Glaze the Wings: Once the wings are done baking, remove them from the oven and toss them in the thickened glaze until well coated.

                Final Bake: Return the glazed wings to the oven for an additional 5-10 minutes to set the glaze.

                  Garnish and Serve: Remove from the oven and let cool slightly. Sprinkle sesame seeds and chopped green onions on top before serving.
