Kale and Egg Scramble

2 cups kale, chopped (stems removed)

4 large eggs

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled

1 tablespoon olive oil

1 clove garlic, minced

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped for garnish

Prep the Ingredients: Rinse and chop the kale, halve the cherry tomatoes, and crumble the feta cheese. Set aside.

    Sauté the Kale: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      Cook the Kale: Add the chopped kale to the skillet and sauté for 3-4 minutes, until wilted and bright green. Season with a pinch of salt, pepper, and red pepper flakes if using.

        Add the Tomatoes: Stir in the halved cherry tomatoes and continue to cook for another 2 minutes until they soften slightly.

          Whisk the Eggs: In a bowl, crack the eggs and whisk them together until well combined.

            Combine Ingredients: Reduce the heat to low, and pour the eggs over the sautéed vegetables in the skillet. Allow the eggs to sit for a few moments before gently stirring to scramble them with the veggies.

              Add Feta & Finish Cooking: When the eggs are almost set, fold in the crumbled feta cheese. Cook for an additional minute until the eggs are cooked through but still soft and creamy.

                Garnish & Serve: Remove from heat, garnish with freshly chopped parsley, and adjust seasoning as needed.
