1 pound andouille sausage, sliced

1 pound chicken breast, diced

1 medium onion, chopped

2 celery stalks, diced

1 bell pepper (red or green), diced

3 cloves garlic, minced

2 cups long-grain rice

4 cups chicken broth

1 can (14 oz) diced tomatoes with green chilies

2 teaspoons Creole seasoning

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 bay leaf

Salt and black pepper to taste

1 cup frozen peas

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the sliced andouille sausage and diced chicken. Sauté until the chicken is browned and cooked through, about 5-7 minutes. Remove from the pot and set aside.

    In the same pot, add the chopped onion, celery, bell pepper, and garlic. Cook for about 5 minutes, or until softened and fragrant.

      Stir in the rice, allowing it to toast slightly for about 2 minutes, stirring often.

        Add the diced tomatoes (with their juices), chicken broth, Creole seasoning, smoked paprika, dried thyme, bay leaf, salt, and pepper. Mix well and bring the mixture to a boil.

          Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes without lifting the lid.

            After 20 minutes, remove the bay leaf and stir in the cooked sausage and chicken along with the frozen peas. Cover the pot again and cook for an additional 5-7 minutes until the peas are heated through and the rice is tender.

              Fluff the jambalaya with a fork and let it sit, covered, for a few more minutes before serving.
