1 cup small pasta (like acini di pepe or orzo)

1 pound ground turkey (or beef for a richer flavor)

1/2 cup grated Parmesan cheese

1/4 cup Italian breadcrumbs

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

8 cups chicken broth

4 cups fresh spinach or kale, chopped

2 medium carrots, diced

2 stalks celery, diced

1/2 onion, finely chopped

2 tablespoons olive oil

Fresh basil for garnish

Instructions
 

In a mixing bowl, combine ground turkey, Parmesan cheese, breadcrumbs, egg, minced garlic, oregano, basil, red pepper flakes (if using), salt, and pepper. Mix until well combined and form into small meatballs, about 1 inch in diameter.

    Heat olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery, sautéing for about 5 minutes until they begin to soften.

      Once the vegetables are softened, add the chicken broth to the pot and bring it to a simmer.

        Gently drop the meatballs into the simmering broth and cook for about 10 minutes until they are fully cooked through.

          Add the small pasta to the soup and cook according to package instructions, usually about 7-10 minutes.

            In the last 2 minutes of cooking, stir in the fresh spinach or kale until wilted and tender.

              Adjust seasoning with additional salt and pepper if necessary.

                Serve hot and garnish with fresh basil and additional grated Parmesan cheese if desired.
