1 cup ricotta cheese

1/2 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Zest of 1 lemon

1/2 cup mini chocolate chips (optional)

Powdered sugar for dusting

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

    In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

      Add the ricotta cheese and mix until well combined. Add the egg and vanilla extract, mixing until smooth.

        In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and lemon zest.

          Gradually add the dry ingredients to the wet mixture, stirring until just incorporated. If using chocolate chips, fold them in at this stage.

            Pour the batter into the prepared baking pan and spread it evenly.

              Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

                Once baked, remove from the oven and allow to cool in the pan for about 10 minutes. Then, lift the bars out using the parchment paper and cool completely on a wire rack.

                  Once cooled, dust the top with powdered sugar before slicing into bars.
