Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 cloves garlic, minced

Salt and pepper to taste

1 cup shredded green cabbage

1 cup shredded red cabbage

1 cup carrots, grated

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey

1 tablespoon lemon juice

1/4 cup Greek yogurt (for dressing)

Instructions

Marinate the Chicken: In a bowl, mix together the olive oil, chopped rosemary, thyme, minced garlic, salt, and pepper. Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes (or overnight in the fridge for maximum flavor).

Prepare the Slaw: In a large bowl, combine the shredded green cabbage, red cabbage, grated carrots, cherry tomatoes, and chopped cilantro. Toss to mix well.

Make the Dressing: In a small bowl, whisk together the apple cider vinegar, honey, lemon juice, and Greek yogurt until smooth. Pour the dressing over the slaw mixture and toss until everything is well coated. Set the slaw aside to allow flavors to meld.

Cook the Chicken: Preheat a grill or a skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until fully cooked and juices run clear (internal temperature should reach 165°F/74°C).

Rest and Slice the Chicken: Once cooked, remove the chicken from the heat and let it rest for 5 minutes. Then slice the chicken into strips.

Assemble the Dish: On a serving platter, create a bed of the fresh summer slaw and lay the sliced herbed chicken on top.
