2 ears of fresh corn, husked

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

4 cups mixed greens (such as spinach and arugula)

1/4 cup feta cheese, crumbled (optional)

1/4 cup cilantro, chopped

2 tablespoons olive oil

2 tablespoons lime juice

Salt and black pepper to taste

Instructions
 

Preheat your grill or grill pan over medium heat.

    Place the husked corn directly on the grill and cook for about 10-12 minutes, turning occasionally, until the corn is nicely charred. Remove from the grill and let it cool slightly.

      Once cooled, cut the kernels off the cobs and place them in a large mixing bowl.

        In the same bowl, add diced avocado, cherry tomatoes, red onion, and mixed greens.

          In a small bowl, whisk together olive oil, lime juice, salt, and black pepper to create the dressing.

            Pour the dressing over the salad ingredients and toss gently to combine without mashing the avocado.

              Sprinkle the salad with crumbled feta cheese (if using) and chopped cilantro for added freshness.

                Serve immediately while fresh, or refrigerate for a maximum of 15 minutes before serving if you prepare it in advance.
