2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

1 ripe mango, diced

1/2 red bell pepper, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

Juice of 1 lime

Fresh cilantro, chopped for garnish

In a large bowl, combine the cubed chicken, olive oil, minced garlic, ground cumin, paprika, salt, and pepper. Mix well until the chicken is evenly coated.

    Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for better flavor).

      While the chicken is marinating, prepare the mango salsa. In a separate bowl, combine the diced mango, red bell pepper, red onion, jalapeño (if using), lime juice, and chopped cilantro. Gently toss to mix everything together. Season with salt to taste.
