4 medium zucchinis

1 cup cooked chicken breast, shredded

1 cup cherry tomatoes, diced

1/4 cup fresh basil leaves, chopped

1/4 cup mozzarella cheese, shredded

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil spray for roasting

Preheat your oven to 400°F (200°C).

    Wash the zucchinis and slice them in half lengthwise. Using a spoon, scoop out the insides, creating a boat-like shape. Reserve the scooped-out flesh for later.

      Lightly spray a baking dish with olive oil and place the zucchini halves cut-side up. Sprinkle them with salt, pepper, and garlic powder. Roast in the oven for about 10-15 minutes until they are tender but still firm.

        In a mixing bowl, combine the shredded chicken, diced cherry tomatoes, chopped basil, mozzarella cheese, reserved zucchini flesh (finely chopped), and balsamic vinegar. Mix until well combined and season with additional salt and pepper to taste.

          Once the zucchini boats are ready, remove them from the oven and fill each boat generously with the chicken bruschetta mixture.

            Return the stuffed zucchini boats to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

              Remove from the oven and let cool for a few minutes before serving.
