Ingredients
  

4 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

1 red bell pepper, diced

1 yellow bell pepper, diced

1 medium red onion, sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional, for spice)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the halved cherry tomatoes, diced red and yellow bell peppers, sliced red onion, and minced garlic. Drizzle with 1 tablespoon of olive oil, and season with salt, pepper, oregano, basil, and red pepper flakes. Toss well to coat.

      On a large sheet pan, place the chicken breasts in the center. Drizzle with the remaining tablespoon of olive oil and season with salt, pepper, and any additional herbs you like.

        Surround the chicken with the mixed vegetable mixture on the sheet pan.

          Roast in the preheated oven for about 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the vegetables are tender.

            Once done, remove from the oven and let it rest for 5 minutes.

              Garnish with fresh basil leaves before serving.
