4 chicken breast fillets

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, chopped

250g burrata cheese

3 cloves garlic, minced

1 tablespoon balsamic vinegar

1 tablespoon olive oil

Salt and pepper to taste

½ teaspoon red pepper flakes (optional)

1 tablespoon Italian seasoning

Instructions
 

Preheat the oven to 400°F (200°C).

    In a large mixing bowl, combine the halved cherry tomatoes, minced garlic, chopped basil, balsamic vinegar, olive oil, salt, pepper, and red pepper flakes. Toss well to coat the tomatoes.

      Place the chicken breast fillets in a baking dish and season both sides with salt, pepper, and Italian seasoning.

        Pour the tomato and basil mixture over the chicken fillets, ensuring they are evenly covered.

          Tear the burrata cheese into pieces and scatter it over the top of the chicken and tomato mixture.

            Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

              For extra flavor, broil for an additional 2-3 minutes to lightly brown the burrata cheese.

                Remove from the oven and let it rest for a few minutes before serving.
