1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 cup vegetable oil

4 large eggs

2 cups grated carrots (about 3 medium carrots)

1 can (8 oz) crushed pineapple, drained

1 cup chopped walnuts or pecans (optional)

1 cup shredded coconut (sweetened or unsweetened)

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients: In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract until smooth.

        Combine Mixtures: Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix.

          Add Fruits and Nuts: Fold in the grated carrots, drained crushed pineapple, chopped nuts (if using), and shredded coconut until evenly distributed.
