2 slices of rustic bread (ciabatta or sourdough)

1/2 zucchini, sliced into thin rounds

1/2 bell pepper, sliced (any color)

1/2 red onion, sliced into rings

1/2 cup mushrooms, sliced

1 cup fresh spinach leaves

1/4 cup roasted red pepper hummus

1/4 cup mozzarella cheese, shredded

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Instructions
 

Preheat a grill pan or panini press on medium heat.

    In a bowl, toss the zucchini, bell pepper, red onion, and mushrooms with olive oil, Italian seasoning, salt, and pepper until evenly coated.

      Place the vegetables on the hot grill pan and cook for about 3-4 minutes per side, or until tender and slightly charred. Remove them from the grill and set aside.

        Spread roasted red pepper hummus generously on one side of each slice of bread.

          On one slice of bread (hummus side up), layer the grilled veggies and add fresh spinach leaves. Top with shredded mozzarella cheese.

            Close the sandwich with the second slice of bread, hummus side down.

              If using a panini press, place the sandwich inside and grill until golden brown and the cheese is melted, about 3-5 minutes. If using a grill pan, place the sandwich on the pan, then weigh it down with another heavy pan or a cast iron skillet to flatten it. Grill for 3-4 minutes per side.

                Once grilled to perfection, remove the panini from the heat. Let it cool for a minute before slicing it in half.
