Choosing the right shrimp is key for grilled shrimp skewers. I recommend large or jumbo shrimp. They hold up well on the grill and cook evenly. Look for shrimp that are fresh, firm, and have a slight sea smell. If using frozen shrimp, make sure to thaw them properly before cooking.

Ingredients

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

2 tablespoons fresh ginger, grated

4 garlic cloves, minced

2 tablespoons honey

2 tablespoons freshly squeezed lime juice

1 teaspoon chili powder

Salt and pepper to taste

Skewers (wooden or metal)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.

In a large mixing bowl, combine the olive oil, grated ginger, minced garlic, honey, lime juice, chili powder, salt, and pepper. Whisk together until well blended.

Add the shrimp to the marinade and toss to coat evenly. Let marinate for at least 15-30 minutes in the refrigerator for the flavors to infuse.

Preheat your grill to medium-high heat.

Thread the marinated shrimp onto the skewers, making sure to leave a bit of space between each shrimp for even cooking.

Once the grill is hot, place the skewers on the grill and cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque. Be careful not to overcook them.

Remove the skewers from the grill and let them rest for a couple of minutes before serving.

Garnish with fresh cilantro and serve with lime wedges on the side for an extra zing.
