4 salmon fillets (6 oz each)

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

For the Citrus Salsa:

1 orange, diced

1 grapefruit, diced

1/4 red onion, finely chopped

1 jalapeño, deseeded and minced

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice

Salt, to taste

Instructions
 

In a small bowl, whisk together olive oil, lemon juice, honey, minced garlic, oregano, smoked paprika, salt, and pepper to create a marinade.

    Place the salmon fillets in a shallow dish and pour the marinade over them, making sure to coat each fillet evenly. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

      While the salmon is marinating, prepare the citrus salsa. In a mixing bowl, combine diced orange, grapefruit, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Toss gently to combine and set aside to allow the flavors to marry.

        Preheat the grill to medium-high heat. Remove the salmon from the marinade and let any excess drip off.

          Place the salmon fillets skin-side down on the grill. Grill for about 5-6 minutes on one side, then gently flip and grill for an additional 4-5 minutes, or until the salmon flakes easily with a fork and is cooked to your desired level of doneness.

            Remove the salmon from the grill and let rest for a few minutes. Serve each fillet topped with a generous spoonful of citrus salsa.
