Grilled Chicken Salad with Lemon Poppy Dressing

Ingredients
  

2 chicken breasts, boneless and skinless

1 tablespoon olive oil

Salt and pepper to taste

6 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, sliced

1/2 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup walnuts, chopped

For the Lemon Poppy Dressing:

1/4 cup fresh lemon juice (about 2 lemons)

1/2 cup extra-virgin olive oil

2 tablespoons honey

1 tablespoon poppy seeds

Salt and pepper to taste

Instructions
 

Prepare the Chicken: Preheat the grill to medium-high heat. Brush the chicken breasts with olive oil and season with salt and pepper on both sides.

    Grill the Chicken: Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes.

      Make the Dressing: In a small bowl, whisk together the fresh lemon juice, extra-virgin olive oil, honey, poppy seeds, salt, and pepper until well combined. Adjust seasoning to taste.

        Assemble the Salad: In a large salad bowl, mix the greens, cherry tomatoes, cucumber, red onion, feta cheese, and walnuts.

          Slice the Chicken: After resting, slice the grilled chicken into thin strips and place it over the salad.

            Dress the Salad: Drizzle the lemon poppy dressing over the salad and toss gently to combine, ensuring everything is coated with the dressing.
