2 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced

6 cups mixed salad greens (arugula, spinach, and romaine)

½ cup feta cheese, crumbled

¼ cup toasted walnuts or pecans

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper to taste

Fresh basil or mint leaves for garnish (optional)

Instructions
 

Prep the Chicken: Rub the chicken breasts with a tablespoon of olive oil, and season with salt and pepper. Let it rest for about 15 minutes to absorb the flavors.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Place the chicken on the grill and cook for about 6-7 minutes on each side or until cooked through (internal temperature should reach 165°F). Remove from the grill and allow to cool slightly before slicing.

      Grill the Peaches: Brush the peach slices lightly with olive oil. Place the peaches cut-side down on the grill for about 3-4 minutes, just until grill marks appear and they are warmed through. Remove and set aside.

        Make the Dressing: In a small bowl, whisk together the balsamic vinegar, honey, and the remaining tablespoon of olive oil. Season with salt and pepper to taste.

          Assemble the Salad: In a large salad bowl, combine the mixed salad greens, grilled peach slices, sliced grilled chicken, crumbled feta cheese, and the toasted nuts.

            Drizzle Dressing: Pour the dressing over the salad and gently toss everything together until well combined.
