Ingredients

2 boneless, skinless chicken breasts

2 cups broccoli florets

3 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

Zest and juice of 1 lemon

1 tablespoon honey (optional for a touch of sweetness)

Fresh parsley, chopped, for garnish

Instructions

Marinate the Chicken: In a medium bowl, mix together 2 tablespoons of olive oil, minced garlic, smoked paprika, oregano, salt, pepper, lemon juice, and honey (if using). Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

Prepare the Broccoli: While the chicken is marinating, bring a pot of salted water to a boil. Add the broccoli florets and blanch for about 2-3 minutes until they turn bright green and are slightly tender. Drain and immediately plunge them into ice water to stop the cooking process. This helps maintain their vibrant color.

Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with nice grill marks.

Sauté the Broccoli: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the blanched broccoli and sauté for about 4-5 minutes until tender. Season with salt, pepper, and lemon zest.

Serve: Once the chicken is done, let it rest for a few minutes before slicing. Serve the grilled chicken over a bed of sautéed broccoli, drizzling any remaining lemon juice over the top. Garnish with freshly chopped parsley.
