Ingredients

4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1 tablespoon balsamic vinegar

1 tablespoon olive oil

Salt and pepper to taste

8 ounces burrata cheese

1 teaspoon honey (optional)

Toasted baguette slices for serving

Instructions

Preheat your grill to medium-high heat.

In a medium bowl, combine the cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper. Mix well and set aside to let the flavors meld.

Season the chicken breasts with salt and pepper on both sides. If desired, lightly brush with olive oil for extra flavor.

Grill the chicken for 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F / 75°C). Remove from the grill and let it rest for a few minutes.

While the chicken is resting, assemble your bruschetta topping by gently mixing the cherry tomato and basil mixture with the burrata cheese. If you like a hint of sweetness, stir in the honey.

Slice the grilled chicken breasts and plate them. Top each slice with the bruschetta mixture generously.

Serve the grilled bruschetta chicken with toasted baguette slices on the side for dipping into the cheesy topping.
