2 boneless, skinless chicken breasts

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil (for frying)

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 red bell pepper, diced

1/2 small red onion, thinly sliced

1/2 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

3 cups mixed greens (spinach, arugula, romaine)

1 tablespoon lemon juice

1 tablespoon red wine vinegar (or extra lemon juice)

1 teaspoon honey

Instructions
 

Season the chicken breasts with garlic powder, dried oregano, paprika, salt, and pepper on both sides.

    Heat olive oil in a skillet over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from heat and let rest for 5 minutes.

      While the chicken cools, prepare the salad ingredients. In a large bowl, combine cherry tomatoes, cucumber, red bell pepper, red onion, Kalamata olives, and mixed greens.

        In a small bowl, whisk together lemon juice, red wine vinegar (or extra lemon juice), honey, salt, and pepper to create the dressing.

          Slice the cooked chicken into strips and add it to the salad bowl. Drizzle the dressing over the salad and toss gently to combine.

            Top with crumbled feta cheese before serving.
