2 chicken breasts, grilled and sliced

4 cups romaine lettuce, chopped

1 cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted

1/2 cup feta cheese, crumbled

1 teaspoon dried oregano

4 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar (or lemon juice)

Salt and pepper to taste

Start by marinating the grilled chicken breasts. Mix 2 tablespoons of olive oil with oregano, salt, and pepper in a bowl and coat the chicken. Let it rest for about 15 minutes to absorb the flavors.

    In a large bowl, add the chopped romaine lettuce and top it with the diced cucumber and halved cherry tomatoes.

      Next, add the sliced red onion and Kalamata olives to the salad.
