2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon lemon zest

Salt and pepper, to taste

4 whole wheat pitas

1 cup cucumber, diced

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1 cup tzatziki sauce (store-bought or homemade)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, mix olive oil, oregano, garlic powder, lemon zest, salt, and pepper. Add the chicken breasts and coat well. Cover and let marinate for at least 30 minutes (or up to overnight in the fridge for enhanced flavor).

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated chicken and cook for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

      Prepare the Vegetables: While the chicken rests, prepare the vegetables by dicing the cucumber, halving the cherry tomatoes, and thinly slicing the red onion.

        Assemble the Pitas: Gently warm the whole wheat pitas in a dry skillet over low heat for about 1 minute on each side or until soft. Stuff each pita with sliced chicken, followed by the diced cucumber, cherry tomatoes, and red onion.

          Add Tzatziki: Generously dollop tzatziki sauce over the filled pitas.

            Garnish and Serve: Sprinkle chopped parsley on top for added color and flavor. Wrap the pitas in parchment paper or foil for easy handling.
