Ingredients

500g potato gnocchi (store-bought or homemade)

200g Gorgonzola cheese, crumbled

200ml heavy cream

2 tablespoons unsalted butter

1 garlic clove, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions

Cook the Gnocchi: In a large pot of boiling salted water, add the potato gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Prepare the Sauce: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Cream and Cheese: Pour in the heavy cream, stirring continuously. Once the cream is heated through, add the crumbled Gorgonzola cheese. Stir until the cheese is melted and the sauce is smooth.

Season the Sauce: Add the thyme leaves and season with salt and pepper to taste. Let the sauce simmer on low for a couple of minutes until it thickens slightly.

Combine Gnocchi and Sauce: Gently fold the cooked gnocchi into the Gorgonzola sauce, ensuring they are well coated. Cook them together for an additional 2-3 minutes, allowing the flavors to meld.

Serve: Divide the gnocchi among plates, garnishing with fresh parsley and a sprinkle of grated Parmesan cheese.
