2 cups coconut milk

1 cup heavy cream

3/4 cup granulated sugar

1/2 teaspoon vanilla extract

Pinch of salt

1/2 cup shredded coconut (unsweetened)

Instructions
 

In a medium saucepan, combine the coconut milk, heavy cream, and sugar. Heat the mixture over medium-low heat, stirring until the sugar has completely dissolved (about 5-7 minutes). Do not let it boil.

    Once the sugar is dissolved, remove the saucepan from heat. Stir in the vanilla extract and a pinch of salt.

      Allow the mixture to cool at room temperature for about 15 minutes.

        After it cools, mix in the shredded coconut until evenly distributed.

          Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions (usually about 20-30 minutes) until it has a soft-serve consistency.

            Transfer the churned coconut ice cream into an airtight container. Press a piece of parchment paper on top to prevent ice crystals from forming and seal with a lid.

              Freeze for at least 4 hours, or until it reaches your desired firmness.

                When ready to serve, scoop the coconut ice cream into bowls and top with toasted coconut flakes if desired.
