2 cups fresh spinach, finely chopped

1 cup feta cheese, crumbled

1 cup all-purpose flour

1/2 cup whole wheat flour

2 large eggs

1 1/2 cups milk

1/4 cup olive oil

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

Preheat the waffle maker according to the manufacturer's instructions to ensure it is hot and ready.

    In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, garlic powder, black pepper, and salt. Whisk together until well blended.

      In another bowl, whisk the eggs and then add the milk and olive oil, mixing until fully combined.

        Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

          Fold in the chopped spinach and crumbled feta cheese, ensuring they are evenly distributed throughout the batter.

            Lightly grease the waffle maker with a small amount of olive oil or cooking spray if needed. Pour an appropriate amount of batter onto the hot waffle maker (about 1/2 to 2/3 cup, depending on your molder's size) and close the lid.

              Cook the waffles according to the manufacturer’s guidelines, usually around 4-5 minutes, or until they are golden brown and crispy.

                Carefully remove the waffles and place them on a wire rack to maintain their crispness while you repeat the process with the remaining batter.

                  Serve warm, optionally garnished with additional feta cheese, a sprinkle of black pepper, or a side of yogurt or tzatziki for dipping.
