200g all-purpose flour

150g granulated sugar

3 large eggs

120ml vegetable oil

100ml freshly squeezed lemon juice

Zest of 2 lemons

2 teaspoons baking powder

1 teaspoon vanilla extract

50g poppy seeds

Pinch of salt

Powdered sugar (for dusting)

Preheat the Oven: Preheat your oven to 180°C (350°F). Grease and flour an 8-inch round cake pan or line it with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, poppy seeds, and salt until well combined. Set aside.

      Combine Wet Ingredients: In a large mixing bowl, beat the sugar and eggs together with an electric mixer on medium speed until light and fluffy (about 3 minutes).

        Add Oil and Flavorings: Slowly add the vegetable oil to the sugar and egg mixture, followed by the lavender extract and lemon zest. Mix until incorporated.

          Incorporate Lemon Juice: Stir in the freshly squeezed lemon juice until the mixture is smooth.
