2 cups jasmine rice

2 tablespoons vegetable oil

4 cloves garlic, minced

1 pound boneless, skinless chicken breast, diced

1 cup broccoli florets

1 bell pepper (any color), diced

1 carrot, diced

1 cup snap peas, trimmed

2 tablespoons soy sauce (low sodium)

1 teaspoon sesame oil

Salt and pepper to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish, optional)

Instructions
 

Rinse the jasmine rice under cold water until the water runs clear. This removes excess starch and prevents stickiness.

    In a medium pot, bring 4 cups of water to a boil. Add the rinsed rice and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15 minutes, or until all the water is absorbed. Once done, fluff the rice with a fork and set aside.

      In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.

        Add the diced chicken to the skillet and season with salt and pepper. Cook for about 5-7 minutes, stirring frequently, until the chicken is golden brown and cooked through.

          Add the diced carrot, bell pepper, and broccoli to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

            Toss in the snap peas and cook for an additional 2 minutes.

              Drizzle the soy sauce and sesame oil over the chicken and veggies, stirring well to combine and coat everything evenly.

                Gently fold the cooked jasmine rice into the skillet, mixing everything together until the rice is well incorporated with the chicken and veggies. Adjust seasoning with salt and pepper as needed.

                  Remove from heat and let it sit for a minute.
