1 loaf of brioche bread, cut into bite-sized cubes

6 large eggs

2 cups milk (whole or almond milk)

1/2 cup heavy cream

1/2 cup pure maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 cup chopped pecans

1/4 cup brown sugar

Butter for greasing the baking dish

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter.

    In a large mixing bowl, whisk together the eggs, milk, heavy cream, maple syrup, vanilla extract, cinnamon, and nutmeg until well combined.

      Add the bite-sized brioche bread cubes to the egg mixture, gently folding them in until the bread is fully coated and soaked in the custard. Allow to sit for 10-15 minutes for the bread to absorb the liquid.

        While the bread is soaking, in a small bowl, mix the chopped pecans with brown sugar.

          After the bread has soaked, pour half of the mixture into the greased baking dish. Sprinkle half of the pecan mixture over the bread layer. Add the remaining bread mixture on top and sprinkle the rest of the pecans evenly over it.

            Cover the dish with foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for another 15-20 minutes, or until the top is golden brown and a knife inserted in the center comes out clean.

              Once done, remove from oven and let it cool for about 5 minutes before slicing.
