500g firm white fish fillets (such as cod or tilapia), cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons ginger-garlic paste

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon garam masala

1 teaspoon ground cumin

1 tablespoon lemon juice

Salt to taste

2 tablespoons vegetable oil

For the Masala Sauce:

2 tablespoons ghee or butter

1 large onion, finely chopped

2 green chilies, slit lengthwise

1 tablespoon ginger-garlic paste

1 can (400g) diced tomatoes or pureed tomatoes

1 teaspoon sugar

1 teaspoon ground coriander

1 teaspoon smoked paprika (for color)

1/2 cup coconut milk or heavy cream

Fresh cilantro, chopped (for garnish)

Instructions
 

Marinate the Fish: In a bowl, combine the yogurt, ginger-garlic paste, turmeric, red chili powder, garam masala, ground cumin, lemon juice, and salt. Add the fish pieces, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to an hour.

    Prepare the Tikka: Preheat the oven to 200°C (400°F) or an outdoor grill. Place the marinated fish on a baking sheet lined with parchment paper. Brush with 1 tablespoon of vegetable oil. Bake or grill for 10-12 minutes until the fish is cooked through and has nice charred edges. Set aside.

      Make the Masala Sauce: In a large skillet, heat ghee or butter over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes. Add the slit green chilies and ginger-garlic paste, cooking for another 2 minutes.

        Add Tomatoes and Spices: Stir in the diced or pureed tomatoes, sugar, ground coriander, and smoked paprika. Cook the mixture until it starts to thicken, about 10 minutes.

          Build the Flavor: Reduce the heat to low and stir in the coconut milk or heavy cream, mixing well. Allow the sauce to simmer for 5 minutes, adjusting the seasoning with salt if necessary.

            Combine and Serve: Gently fold in the cooked fish pieces, ensuring they are coated with the sauce. Simmer for another 2-3 minutes to meld the flavors.

              Garnish and Enjoy: Transfer the Fish Tikka Masala to a serving dish, and garnish with freshly chopped cilantro before serving.
