1 small onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking powder

Salt and pepper to taste

Oil for frying

For the Bowl:

2 cups cooked quinoa or couscous

1 cup cherry tomatoes, halved

1 cucumber, diced

1 avocado, sliced

1/2 cup feta cheese, crumbled (optional)

1/4 cup tahini sauce (for drizzling)

Fresh lemon wedges (for serving)

Instructions
 

Prepare the Falafel: In a food processor, combine the soaked chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is a coarsely blended dough. Don’t over-process; it should retain some texture.

    Form the Falafel: Shape the mixture into small balls or patties, about the size of a golf ball. Place them on a baking sheet lined with parchment paper.

      Fry the Falafel: Heat oil in a deep frying pan over medium heat. Fry the falafel in batches for 3-4 minutes on each side, or until golden brown and crispy. Drain on paper towels to remove excess oil.

        Assemble the Bowl: In a large bowl, layer the cooked quinoa or couscous as the base. Top with halved cherry tomatoes, diced cucumber, and avocado slices.
