Ingredients

6 large eggs

1/2 cup milk

1/2 cup shredded cheddar cheese

1/2 cup diced bell peppers (mixed colors)

1/4 cup diced onions

1/2 cup cooked and crumbled turkey sausage (or any preferred protein)

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Preheat your oven to 350°F (175°C) and grease a muffin pan with cooking spray or olive oil.

In a large mixing bowl, whisk together the eggs and milk until well combined and frothy.

Stir in the garlic powder, paprika, salt, and pepper to the egg mixture.

Add the shredded cheddar cheese, diced bell peppers, diced onions, and cooked turkey sausage to the mixing bowl. Mix gently to combine all the ingredients evenly.

Pour the egg mixture evenly into the prepared muffin cups, filling each cup about 3/4 full.

Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the tops are lightly golden. A toothpick inserted into the center should come out clean.

Once cooked, remove from the oven and allow to cool for a few minutes before gently running a knife around the edges to release the muffin cups.

Carefully remove the muffin cups from the pan and place them on a serving platter. Garnish with fresh parsley if desired.
