Ingredients
  

2 cups cooked white or brown rice

2 boneless, skinless chicken breasts

1/2 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup spinach leaves

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves (for garnish)

Instructions
 

Begin by cooking the rice according to package instructions. Set aside.

    Season both sides of the chicken breasts with salt and pepper.

      In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side or until the chicken is fully cooked and golden brown.

        Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.

          In the same skillet, add the halved cherry tomatoes and spinach leaves. Sauté for about 2-3 minutes or until the spinach has wilted and the tomatoes are soft.

            Reduce the heat to low and add the cooked rice to the skillet, followed by the pesto. Stir well to combine all the ingredients.

              Add the sliced chicken on top of the rice mixture and gently toss to coat everything in the pesto.

                Sprinkle the grated Parmesan cheese over the top and let it simmer for another minute until the cheese is slightly melted.

                  Remove from heat and garnish with fresh basil leaves before serving.
