2 boneless, skinless chicken breasts

1 cup fresh basil pesto

1 cup cherry tomatoes, halved

1 tablespoon olive oil

Salt and pepper to taste

4 slices of rustic bread (like sourdough or ciabatta)

1/2 cup mozzarella cheese, shredded

Fresh basil leaves for garnish

Instructions
 

Preheat the oven to 375°F (190°C).

    Season the chicken breasts with salt and pepper on both sides.

      In a skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook for 5-7 minutes on each side, or until golden brown and cooked through.

        Once the chicken is cooked, remove from the skillet and allow it to rest for a few minutes before shredding it into bite-sized pieces.

          In the same skillet, add the halved cherry tomatoes and sauté for about 2-3 minutes until they slightly soften. Season with a little salt and pepper.
