1 pound boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 lemon, juiced

1 cup plain Greek yogurt

2 cloves garlic, minced

1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, finely chopped

Skewers (soak in water if wooden)

Instructions
 

In a large bowl, combine the olive oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, pepper, and lemon juice. Stir until well mixed.

    Add the chicken pieces to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes, preferably 2 hours to deepen the flavor.

      Meanwhile, prepare the garlic yogurt sauce. In a medium bowl, combine the Greek yogurt, minced garlic, dill, parsley, and a pinch of salt. Mix well and set aside in the refrigerator to allow the flavors to meld.

        Preheat your grill or grill pan over medium-high heat. If using wooden skewers, ensure they have soaked in water for at least 30 minutes to prevent burning.

          Thread the marinated chicken pieces onto the skewers, packing them closely but not overly tight.

            Place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. An internal temperature of 165°F (75°C) confirms they’re done.

              Remove the skewers from the grill and let them rest for a couple of minutes.

                Serve the chicken skewers hot with a generous drizzle of garlic yogurt sauce on top or on the side for dipping.
