Ingredients

2 boneless, skinless chicken breasts

1 cup cherry tomatoes, diced

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1 tablespoon balsamic vinegar

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and pepper to taste

1 cup cooked quinoa or rice

1 cup mozzarella cheese, shredded

Optional: A drizzle of balsamic glaze for serving

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, and dried oregano on both sides.

Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until cooked through and no longer pink in the center. Remove from skillet and let rest.

Make the Bruschetta Topping: In a bowl, combine diced cherry tomatoes, minced garlic, chopped basil, and balsamic vinegar. Gently toss until mixed.

Slice the Chicken: Once the chicken has rested for a few minutes, slice it into strips.

Assemble the Bowls: In a serving bowl, add a base of cooked quinoa or rice. Top with sliced chicken, followed by the bruschetta mixture, and then sprinkle mozzarella cheese on top.

Final Touch: For an added burst of flavor, drizzle balsamic glaze over the assembled bowls before serving.
