Ingredients

4 boneless, skinless chicken breasts

3 cups cherry tomatoes, halved

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil

1 cup plain Greek yogurt

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh dill, finely chopped

1 tablespoon lemon juice

Instructions

Marinate the Chicken: In a bowl, combine the chicken breasts with olive oil, smoked paprika, cumin, salt, and pepper. Coat the chicken evenly and let it marinate in the fridge for at least 30 minutes, or up to 2 hours for maximum flavor.

Cook the Chicken: In a large skillet over medium heat, add a bit more olive oil if needed. Remove the chicken from the marinade and cook in the skillet for about 6-7 minutes on each side or until the chicken is golden brown and cooked through. Remove it from the skillet and set aside.

Sauté the Vegetables: In the same skillet, add the diced onion and cook for about 3-4 minutes or until soft. Then, add the minced garlic and cook for another minute until fragrant.

Add Tomatoes: Stir in the halved cherry tomatoes and season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes start to break down and create a sauce.

Combine Chicken and Sauce: Return the cooked chicken to the skillet with the tomatoes, spooning some of the sauce over the chicken. Let it simmer for another 3-5 minutes to meld the flavors together.

Prepare Herbed Yogurt: In a small bowl, mix the Greek yogurt with chopped parsley, dill, and lemon juice. Season with salt and pepper to taste.

Serve: Plate the chicken topped with the tomato sauce and a generous dollop of herbed yogurt on the side.

                Prep Time: 30 minutes | Total Time: 1 hour | Servings: 4

                  - Presentation Tips: Serve the dish on a large platter, garnished with a sprinkle of fresh herbs and lemon wedges for a vibrant touch. Consider serving it with fluffy rice or couscous to soak up the delicious sauce.
