2 cups cooked quinoa

1 lb chicken breast, diced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium red onion, diced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust for spice level)

1 teaspoon chili powder

Salt and pepper to taste

1 avocado, sliced

Marinate Chicken: In a bowl, combine diced chicken, olive oil, smoked paprika, cayenne pepper, chili powder, salt, and pepper. Mix well and let it marinate for at least 15 minutes while you prepare the vegetables.
