6 large eggs

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 tablespoon apple cider vinegar

1/4 teaspoon smoked paprika

1/4 teaspoon garlic powder

Salt and pepper to taste

1 small avocado, mashed

2 tablespoons fresh cilantro, finely chopped

1 tablespoon pickled jalapeños, finely chopped (optional for heat)

Crumbled feta cheese for topping

Instructions
 

Begin by placing the eggs in a saucepan and covering them with cold water. Bring the water to a boil over medium-high heat. As soon as the water boils, remove the pan from heat, cover it, and let it sit for 12 minutes.

    After 12 minutes, transfer the eggs to a bowl of ice water and let them cool for about 5-10 minutes. This will make them easier to peel.

      Carefully peel the eggs, then slice them in half lengthwise. Pop the yolks into a mixing bowl and place the egg whites on a serving platter.

        To the bowl with the yolks, add mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper. Mash everything together until creamy and smooth.

          Gently fold in the mashed avocado, chopped cilantro, and pickled jalapeños (if using) into the yolk mixture until combined. Adjust seasoning if necessary.

            Using a piping bag or a spoon, fill the egg white halves with the avocado yolk mixture.

              Sprinkle crumbled feta cheese on top of each filled egg for an extra flavor kick.

                Chill the deviled eggs in the refrigerator for about 15 minutes before serving.
