2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup quinoa, rinsed

2 cups vegetable broth

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 avocado, sliced

1 cup chickpeas, rinsed and drained

Handful of spinach or arugula

Juice of 1 lemon

2 tablespoons tahini

Fresh herbs for garnish (parsley or cilantro)

Marinate Chicken: In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes (or up to overnight in the fridge).

    Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork and set aside.
