Ingredients
  

4 boneless, skinless chicken breasts

1 zucchini, sliced into thick rounds

1 yellow bell pepper, cut into strips

1 red onion, cut into wedges

1 cup cherry tomatoes, halved

3 tablespoons olive oil

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Preheat your grill or grill pan over medium-high heat.

    In a large bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, paprika, salt, and pepper.

      Add the chicken breasts to the marinade and let them soak for about 15-20 minutes. For extra flavor, you can marinate them longer in the refrigerator.

        While the chicken is marinating, toss the zucchini, yellow bell pepper, red onion, and cherry tomatoes in the remaining marinade until well-coated.

          Once the grill is hot, place the marinated chicken breasts on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

            After flipping the chicken, place the veggies on the grill. Grill the vegetables for about 4-5 minutes, turning occasionally, until they are charred and tender.

              Remove both the chicken and veggies from the grill. Let the chicken rest for a few minutes before slicing.

                Serve the sliced chicken on a platter, topped with the charred vegetables. Garnish with fresh basil leaves for a burst of flavor.
