2 cups rhubarb, diced

3 large eggs

1 cup granulated sugar

1 cup whole milk

1 teaspoon vanilla extract

1/4 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

Powdered sugar for dusting

Preheat your oven to 350°F (175°C) and grease a 9-inch pie dish with butter or non-stick spray.

    In a medium bowl, combine the diced rhubarb with 1/4 cup of the granulated sugar, and set it aside to allow it to release some juices.

      In a large mixing bowl, whisk together the eggs, remaining 3/4 cup sugar, milk, vanilla extract, flour, baking powder, salt, and cinnamon (if using) until smooth and well blended.

        Stir in the rhubarb along with any juices it released, mixing until evenly distributed.

          Pour the rhubarb mixture into the prepared pie dish, smoothing the top with a spatula.

            Bake in the preheated oven for 45-50 minutes, or until the custard is set and the edges are lightly golden. The center may still have a slight jiggle but it will firm up as it cools.

              Remove from the oven and allow to cool at room temperature for at least 30 minutes before slicing.

                For serving, dust the top with powdered sugar for a sweet finish.
