1 block (14 oz) firm tofu, pressed and sliced into strips

1 cup breadcrumbs (panko or regular)

2 tablespoons cornstarch

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons soy sauce

1 tablespoon sesame oil

4 large whole grain tortillas

1 cup shredded lettuce (or mixed greens)

1 avocado, sliced

1 small cucumber, julienned

½ cup spicy sriracha mayo (mix mayonnaise with sriracha to taste)

Fresh cilantro or parsley for garnish

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    In a bowl, combine the breadcrumbs, cornstarch, garlic powder, smoked paprika, salt, and pepper. Mix well.

      In another bowl, toss the sliced tofu strips with soy sauce and sesame oil until evenly coated.

        Dredge each tofu strip in the breadcrumb mixture, pressing lightly to ensure they are well coated.

          Place the coated tofu strips on the prepared baking sheet, ensuring they are not touching.

            Bake in the preheated oven for about 25-30 minutes, flipping halfway, until golden brown and crispy.

              While the tofu is baking, prepare your wrap by laying out a whole grain tortilla.

                Spread a generous amount of spicy sriracha mayo over the tortilla.

                  Layer on some shredded lettuce, sliced avocado, julienned cucumber, and a few crispy tofu strips.

                    Garnish with fresh cilantro or parsley, then roll the wrap tightly from one end, folding in the sides as you go.

                      Slice the wrap in half on a diagonal and serve immediately.
