2 tablespoons melted butter (plus more for cooking)

1 teaspoon vanilla extract

In a large mixing bowl, whisk together the all-purpose flour, matcha powder, sugar, and salt until well combined.

    In a separate bowl, beat the two eggs and then add the milk, melted butter, and vanilla extract, mixing until smooth.

      Gradually pour the wet ingredients into the dry mixture while whisking continuously to avoid lumps. Continue whisking until the batter is smooth; let it rest for 30 minutes to allow the flour to absorb the liquids.

        Heat a non-stick skillet or crêpe pan over medium heat and lightly grease with butter.

          Pour about 1/4 cup of batter into the pan, immediately tilting the pan in a circular motion to spread the batter evenly across the surface.

            Cook for about 1-2 minutes or until the edges start to lift and the bottom is lightly golden. Carefully flip the crêpe with a spatula and cook for another 1 minute on the other side.

              Remove the crêpe and place it on a plate; repeat the process with the remaining batter, stacking each crêpe on top of the other to keep them warm.

                Once all crêpes are cooked, fill each with fresh fruits and a dollop of whipped cream or yogurt before folding or rolling them up.

                  If desired, dust the finished crêpes with extra matcha powder for decoration and serve them warm.
