1 cup Arborio rice

4 cups vegetable broth

1 cup mushrooms (cremini or button), sliced

1 small onion, finely chopped

2 cloves garlic, minced

1 cup fresh spinach, chopped

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

½ cup heavy cream (or coconut cream)

2 tablespoons olive oil

2 tablespoons unsalted butter (or vegan butter)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a saucepan, heat the vegetable broth over low heat so it's warm but not boiling.

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

      Add the minced garlic and sliced mushrooms to the skillet. Cook for another 5-7 minutes, until the mushrooms are golden and have released their moisture.

        Stir in the Arborio rice, allowing it to toast slightly for about 1-2 minutes, stirring frequently.

          Begin adding the warm vegetable broth to the rice, one ladleful at a time. Stir continuously until most of the liquid is absorbed before adding more. This should take about 18-20 minutes.

            When the rice is almost cooked (al dente), stir in the chopped spinach and allow it to wilt.

              Reduce the heat to low, then add the remaining butter, heavy cream, and Parmesan cheese. Stir until everything is creamy and well combined.

                Taste and season with salt and pepper as desired.

                  Remove from heat and let it sit for a minute before serving.
