2 cups cooked white rice

1 pound boneless, skinless chicken breasts, diced

1 cup broccoli florets (fresh or frozen)

1 cup diced carrots

1 cup shredded cheddar cheese

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper to taste

1/2 cup breadcrumbs

1 tablespoon olive oil

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large bowl, combine the cooked rice, diced chicken, broccoli, carrots, and half of the cheddar cheese.

      In a separate bowl, mix together the cream of chicken soup, chicken broth, garlic powder, onion powder, thyme, salt, and pepper. Stir until well combined.

        Pour the soup mixture over the rice and chicken mixture, and stir to combine thoroughly.

          Transfer the combined mixture into a greased 9x13-inch baking dish.

            In a small bowl, mix the breadcrumbs with olive oil until the breadcrumbs are coated. Sprinkle the breadcrumb mixture evenly over the casserole.

              Top the casserole with the remaining cheddar cheese.

                Cover the baking dish with foil, and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the topping is golden brown and the casserole is bubbling.

                  Once baked, let it sit for 5 minutes before serving to allow it to set.
