8 oz (225g) pasta of your choice (fettuccine or penne works well)

2 cups fresh spinach, washed and chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 teaspoon nutmeg

Zest of 1 lemon (for brightness)

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of cooking water, then drain and set aside.
