8 oz. fettuccine or your favorite pasta

2 tablespoons olive oil

3 cloves garlic, minced

6 cups fresh spinach (or 2 cups frozen spinach, thawed and drained)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 teaspoon nutmeg

Salt and pepper to taste

Fresh lemon zest for garnish

Optional: crushed red pepper flakes for a bit of heat

Cook the Pasta: In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté for about 1 minute until fragrant, making sure not to burn it.

      Add Spinach: If using fresh spinach, add it by the handful, stirring until it wilts down completely. If using frozen spinach, add it to the skillet and cook until heated through.

        Make the Cream Sauce: Lower the heat and pour in the heavy cream. Stir well to combine with the spinach and garlic. Allow it to simmer for about 3-4 minutes until slightly thickened.

          Incorporate Cheese & Season: Stir in the grated Parmesan cheese, nutmeg, salt, and pepper. Mix well until the cheese melts into the cream sauce. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.

            Combine Pasta and Sauce: Add the drained fettuccine to the skillet and toss it in the creamy spinach sauce until the pasta is well coated. If using, add crushed red pepper flakes for a hint of spice.
