12 oz. pasta (fettuccine or your choice)

2 cups fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

1/2 teaspoon nutmeg

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for heat

Fresh basil or parsley for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Cream Sauce: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

      Add the Spinach: Reduce the heat to low and mix in the chopped spinach. Cook for about 2-3 minutes until the spinach is wilted.

        Create the Cream Base: Pour in the heavy cream, stirring continuously. Bring the mixture to a gentle simmer.
